DESCRIPTION: This pear-shaped cheese is made by tying a fresh mozzarella ball about 1/3 of the way from the top and hanging it to dry. After drying, the cheese is naturally smoked over cherrywood chips. Scamorza can be used in the same dishes as fresh mozzarella, but since it is drier, it is slightly firmer. Scamorza shreds exceptionally well, and can even be grilled or fried.
